Semiya Payasam
Easy to cook payasam, will linger your taste buds for sure. Try this recipe, feel it and taste it.
COOK WITH LOVE
Ingredients:
- Fried Vermicelli - 250gm
- Full fat milk - 1.5ltr
- Ghee - 200ml
- Sugar - 300gm
- Cardamon - 5 pieces
- Cashew Nuts - 50gm
- Raisins - 30gm
- Water - 1.5ltr
Serves: 9-10
Preparation Time: 10mins
Prep1: In a frying pan under medium simmer pour 60ml of ghee add cashew nuts and fry it, once medium fried transfer it to a small plate. Then add the raisins in the pan, heat it for 2 mins. Once it's plumped transfer it to the same plate.

Prep2: Take 2 teaspoons of sugar in a chutney grinder. Add 5pieces of cardamon and grind it until it turns white powder.

Step1: Pour 15ml of ghee in a low hot pan. Add vermicelli and stir it for 15-20 seconds and keep this aside.
Step2: Take 1ltr water in a separate pot and boil it. Once boiled, add vermicelli and allow it to semi-cook for 5 mins. Then add 3 teaspoons of sugar and boil it for 5 more mins. (Please note that if you are using very thin vermicelli boil it for 2 mins and then add 3 teaspoons of sugar and again boil it for 2 mins.)
Step 3: Heat a medium size pot. Once its hot add 25 ml of ghee and spread it to reach out to all corners of the pot. Pour 1.5ltr of full-fat milk and stir it continuously for 10 mins. Then add 10 teaspoons of sugar. Stir continuously and allow it to boil for 20 mins more, till the color of milk turns to mild rose.
Step4: Then slowly transfer the cooked vermicelli(Step2) into the pot with boiled milk(Step3) and stir it for 7mins. Keep it in simmer.
Step5: Add the sugar powder(Pre2) in the milk and vermicelli mix(Step4) and stir well for 3 mins.
Step6: Finally add the raisins and cashew nuts. After 1min switch off the stove.
Your payasam is ready. Serve it warm.
