Varutharacha Sravu Curry
COOK WITH LOVE
Ingredients:
- Shark fish in cube size: 500gm
- Dry red chilies: 8-12nos
- Coriander: 3tsp
- Fenugreek: 1pinch
- Grated coconut: ½ Cup
- Curry leaves: 5 sprigs
- Garlic cloves: 8nos
- Ginger: ½ inch
- Medium size tomato: 1
- Mustard: ¼ tsp
- Coconut Oil: 7tsp
- Fish tamarind (Kodampuli): 4-5nos
- Salt to taste
Time: 15Minutes
Coconut Mixture:
Mildly grind the grated coconut in a chutney grinder for few seconds. (This will help the whole grated coconut to equally get cooked/ heated in the frying pan.)
Add 3tsp of coconut oil in a heated frying pan. Once the oil is hot add the coconut and stir it until it gets light golden color.
Then add Dry red chilies, Coriander, Fenugreek and 2 sprigs of Curry leaves in the coconut and stir it till it turns brown color and smells good. Make sure your do this in simmer.
Soon (before heat loss) transfer the entire contents from the frying pan into a grinder and grind it initially without water for few seconds and then add water and grind until you get the desired thickness. You will get a coffee color for this mixture. Your coconut mixture is ready now.
Crush ginger and garlic, chop the tomato and keep these in a separate plate.
Directions:
Time: 30Minutes
In a medium heated clay pot pour 3tsp of coconut oil. When it’s hot add mustard seeds. Once popped add curry leaves and stir it for 2 minutes. Add crushed ginger & garlic and stir it for 3 to 5minutes. Then lower the flame.
Then add Chopped tomato, Coconut mixture, Fish tamarind & salt into the mix. Add 1 cup of water and heat the pot in high flame until it boils.
Then add fish cubes, cover the clay pot with a lid and cook it for 15 minutes. Then check salt, add if required. Add balance curry leaves. Cover the pot and heat it in medium flame until you get thick curry.
Once you get the desired thickness for the curry, switch off the stove. Add 1tsp coconut oil and cover the pot for 15minutes. Your fish curry is ready now.
Have it with boiled brown rice, a delicious super combo!!!
